Globally, kitchen enthusiasts often find themselves convert a basic purchase of potatoes into a hearty evening meal. In my cooking adventures might lead to a aromatic Sri Lankan potato curry, a flavorful Gujarati version, or even a patiently simmered Spanish tortilla for a cozy occasion. Today, however, the answer comes from Greece. Yahni describes a traditional Greek culinary style: produce simmered generously in olive oil and tomatoes until perfectly tender. It’s more than a recipe—it’s a celebration of the simple, the patient, and the profoundly good (and yes, it also makes a wonderful dinner).
Serve this with a rustic loaf or grilled bread for a substantial dinner. It also goes perfectly with a selection of mezze or even topped with a runny egg for a unexpectedly great breakfast.
Prep Time: 10 minutes
Cook Time: 1 hour
Serves: 4 people
Place five tablespoons of olive oil in a large, heavy-based pot that has a cover. Set it over a moderately high heat. Once the oil is shimmering, add the onion slices and a teaspoon of salt. Sauté, stirring occasionally, for about 10 minutes, until the onion is yielding enough to succumb to a wooden spoon.
Add the minced garlic and cook for a further two minutes, while stirring. Then, add the potato wedges and oregano, mixing until they are nicely glossed in the oil. Add the tomato puree and cook for one minute. Add the chopped tomatoes along with 400ml of water. Increase the heat until it boils, then cover the pan, lower the heat to a low simmer, and leave to cook for 20 minutes.
Meanwhile, prepare the whipped feta. In a small bowl with a hand blender, blitz the feta, Greek yoghurt, lemon zest and juice, three tablespoons of olive oil, and a big pinch or two of salt until the mixture is smooth and creamy.
Fold the pitted kalamata olives into the potato stew. Continue to simmer without the lid for a further 15-20 minutes, until the potatoes are completely soft and the sauce has thickened nicely.
Spoon the steaming yahni into serving dishes. Finish each with a liberal amount of the whipped feta and a scattering of dried oregano.
